Description

A rich and savory Swedish cheese pie, made with a buttery, flaky crust and filled with creamy Västerbotten cheese. This classic dish is a must-have at festive gatherings and pairs beautifully with a crisp salad or a dollop of crème fraîche.

For the Pastry:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold, cubed)
  • 3 tablespoons cold water

For the Filling:

  • 1 1/2 cups grated Västerbotten cheese (or aged cheddar as a substitute)
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons chopped fresh chives (for garnish)

Instructions

  1. Prepare the Pastry:

    • In a bowl, mix flour and salt.
    • Cut in the cold butter until the mixture resembles coarse crumbs.
    • Add cold water and mix until a dough forms.
    • Wrap and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C).

    • Roll out the chilled dough and press it into a 9-inch tart pan.
    • Prick the bottom with a fork and blind bake for 10 minutes.
  3. Prepare the Filling:

    • In a bowl, whisk together eggs, cream, milk, salt, pepper, and nutmeg.
    • Stir in the grated Västerbotten cheese.
  4. Assemble & Bake:

    • Pour the cheese mixture into the pre-baked crust.
    • Bake for 25-30 minutes, or until the filling is set and golden brown.
  5. Serve:

    • Let cool slightly before garnishing with fresh chives.
    • Serve warm with a salad or crème fraîche.

Notes

  • Västerbotten cheese is traditional, but aged cheddar or Gruyère can be used as substitutes.
  • Blind baking prevents the crust from getting soggy.
