For the Pastry:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (cold, cubed)
- 3 tablespoons cold water
For the Filling:
- 1 1/2 cups grated Västerbotten cheese (or aged cheddar as a substitute)
- 3 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 2 tablespoons chopped fresh chives (for garnish)

Prepare the Pastry:
- In a bowl, mix flour and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add cold water and mix until a dough forms.
- Wrap and chill for 30 minutes.

Preheat oven to 375°F (190°C).
- Roll out the chilled dough and press it into a 9-inch tart pan.
- Prick the bottom with a fork and blind bake for 10 minutes.

Prepare the Filling:
- In a bowl, whisk together eggs, cream, milk, salt, pepper, and nutmeg.
- Stir in the grated Västerbotten cheese.

Assemble & Bake:
- Pour the cheese mixture into the pre-baked crust.
- Bake for 25-30 minutes, or until the filling is set and golden brown.

Notes
- Västerbotten cheese is traditional, but aged cheddar or Gruyère can be used as substitutes.
