For the Chex Mix:

  • 1 (12.8 oz) box Rice or Corn Chex cereal
  • 3 cups pretzels
  • 3 cups assorted nuts (almonds, cashews, pecans, or peanuts)

For the Toffee Coating:

  • 1 cup unsalted butter
  • 2 cups dark brown sugar, packed
  • 3/4 cup light corn syrup
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking soda

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 250°F (120°C).
  2. Line a large baking sheet with parchment paper.

Step 2: Make the Toffee Coating

  1. In a large saucepan, melt butter, brown sugar, corn syrup, and salt over medium heat, stirring frequently.
  2. Bring to a boil and let cook for 3-4 minutes, without stirring.
  3. Remove from heat and carefully stir in vanilla extract and baking soda (the mixture will bubble up).

Step 3: Coat & Bake the Mix

  1. In a large mixing bowl, combine Chex cereal, pretzels, and nuts.
  2. Pour the warm toffee mixture over the dry ingredients and gently toss to coat evenly.
  3. Spread the coated mix onto the prepared baking sheet in an even layer.
  4. Bake for 45 minutes, stirring every 15 minutes to prevent burning.

Step 4: Cool & Serve

  1. Remove from the oven and let cool completely before breaking into pieces.
  2. Store in an airtight container for up to 1 week.

Notes

  • Want extra crunch? Add 1 cup of mini pretzel rods or popcorn.
  • Make it chocolatey! Drizzle with melted white or dark chocolate after cooling.
  • For a spicier kick, add ¼ teaspoon cayenne pepper to the toffee mixture.
