- 8 oz mascarpone cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon espresso powder
- 1/4 teaspoon vanilla extract
- 1/2 cup chocolate chips (for coating)
- 1/2 cup cocoa powder (for dusting)
Instructions
Step 1: Make the Truffle Mixture
- In a mixing bowl, combine crushed ladyfingers, mascarpone cheese, powdered sugar, espresso powder, and vanilla extract.
- Mix until a smooth dough-like consistency forms. If the mixture feels too soft, chill it in the fridge for 15-20 minutes.
Step 2: Shape the Truffles
- Scoop out tablespoon-sized portions and roll them into balls.
- Place on a parchment-lined baking sheet and chill for 20 minutes.
Step 3: Coat the Truffles
- Melt chocolate chips in a microwave or double boiler, stirring until smooth.
- Roll half of the truffles in cocoa powder and dip the other half in melted chocolate, letting excess drip off.
- Place back on the baking sheet and refrigerate for another 15 minutes to set.
