For the Meatloaf:

  • 1 1/2 lbs ground beef (80/20)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 large egg, beaten
  • 1/4 cup chopped parsley (optional)

For the Glaze:

  • 1/3 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  • In a large bowl, mix breadcrumbs and milk; let sit for 5 minutes to absorb.
  • Add ground beef, onion, garlic, Worcestershire sauce, Dijon mustard, salt, black pepper, smoked paprika, beaten egg, and parsley. Mix gently until just combined (do not overmix).
  • Shape into a loaf and place on the prepared baking sheet or in a loaf pan.
  • In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Spread half the glaze over the meatloaf.
  • Bake for 40 minutes, then spread the remaining glaze on top.
  • Continue baking for 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
  • Let rest for 10 minutes before slicing. Serve with mashed potatoes and vegetables.

Notes

  • For extra moisture, substitute half the ground beef with ground pork.
  • Swap breadcrumbs with crushed crackers or oats for a different texture.
  • Leftovers make great sandwiches!
