Description

  • 1 cup white chocolate chips (high quality)
  • 1 1/3 cups heavy cream (or heavy whipping cream)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • Red gel food coloring (optional)

Instructions

Step 1: Melt the White Chocolate

  1. Heat ⅓ cup of heavy cream in a microwave-safe bowl until warm (about 30-45 seconds).
  2. Add white chocolate chips and let sit for 1 minute, then stir until smooth.
  3. If needed, microwave in 10-second intervals until fully melted. Let cool to room temperature.

Step 2: Whip the Heavy Cream

  1. In a large bowl, beat remaining 1 cup of heavy cream until soft peaks form.
  2. Add powdered sugar, vanilla extract, salt, and strawberry powder and continue whipping until stiff peaks form.

Step 3: Fold and Chill

  1. Gently fold in the cooled white chocolate mixture until smooth and fully combined.
  2. If using, add a drop of red gel food coloring for a vibrant pink hue.
  3. Cover and chill for at least 1 hour before using as a cake filling.

Notes

  • For the best texture, use freeze-dried strawberries for intense flavor without added moisture.
  • Chill the mousse before using to help it firm up and hold its shape in cakes.
