Description

These Strawberry Lime Concha Ice Cream Sandwiches are a bold and flavorful Mexican fusion dessert made with pink conchas, vanilla ice cream, juicy strawberries, and a zesty lime kick—perfect for summer parties or an eye-catching treat!


Ingredients

  • 4 pink conchas (Mexican sweet bread)

  • 2 cups vanilla ice cream

  • 1 cup fresh strawberries, hulled and sliced

  • 1 tablespoon granulated sugar

  • Zest of 1 lime

 

  • 1 tablespoon lime juice


Instructions

  • In a bowl, combine strawberries, sugar, lime zest, and lime juice. Gently mix and let sit for 10–15 minutes to macerate.

  • Slice conchas in half horizontally to create sandwich tops and bottoms.

  • Scoop vanilla ice cream onto the bottom half of each concha.

  • Spoon over the macerated strawberries, allowing the syrup to drizzle over the ice cream.

  • Cap with the top half of the concha and serve immediately.
