For the Base:
- 1 cup all-purpose flour

- 2 large eggs
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 cup milk
For the Mousse Layer:
- 1 cup heavy whipping cream
- 1/2 cup cream cheese (softened)
- 1/4 cup powdered sugar
- 1/2 cup strawberry puree
- 1 tbsp gelatin (dissolved in 2 tbsp warm water)
For the Jelly Topping:
- 1 1/2 cups fresh strawberries (sliced)
- 1 cup strawberry juice
- 1 tbsp gelatin (dissolved in 2 tbsp warm water)
Instructions
- Bake the Base: Preheat oven to 350°F (175°C). Beat eggs and sugar until fluffy, then mix in vanilla, flour, baking powder, and milk. Pour into a greased cake pan and bake for 15 minutes. Let cool.
- Prepare the Mousse: Whip heavy cream until soft peaks form. In another bowl, mix cream cheese, powdered sugar, and strawberry puree. Gently fold in whipped cream and dissolved gelatin. Spread over the cooled cake base and refrigerate for 1 hour.
- Make the Jelly Topping: Arrange sliced strawberries on top of the mousse layer. Mix strawberry juice with dissolved gelatin and gently pour over the strawberries.
- Chill & Serve: Refrigerate for at least 4 hours until fully set. Slice and enjoy!
