Description

These Strawberry Brownies are a quick and easy dessert made with strawberry cake mix, fresh strawberries, and a luscious glaze. They’re soft, chewy, and bursting with strawberry flavor, making them perfect for Valentine’s Day, summer parties, or any time you crave a fruity treat!

For the Brownies:

  • 1 box strawberry cake mix
  • 1 egg
  • 1/3 cup vegetable oil or melted butter

For the Glaze:

  • 4 oz cream cheese, softened
  • 2 tbsp seedless strawberry jam
  • 4 tbsp heavy cream
  • 1 cup powdered sugar

For Garnish:

  • 1/2 cup fresh strawberries, diced
  • Whole strawberries, for decoration

Instructions

1. Prepare the Brownies

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine strawberry cake mix, egg, and vegetable oil (or butter). Stir until a thick dough forms.
  3. Press the dough evenly into the prepared pan.
  4. Bake for 15-18 minutes, or until the edges are set and the center is slightly soft.
  5. Let cool completely before adding the glaze.

2. Make the Glaze

  1. In a bowl, beat together cream cheese, strawberry jam, and heavy cream until smooth.
  2. Gradually mix in powdered sugar until fully combined and creamy.

3. Assemble & Serve

  1. Spread the glaze evenly over the cooled brownies.
  2. Sprinkle with diced strawberries and decorate with whole strawberries if desired.
  3. Let set for 10-15 minutes, then slice into squares and enjoy!

Notes

  • Storage: Store in an airtight container in the fridge for up to 3 days.
  • Make it Extra Sweet: Drizzle with white chocolate or add a dusting of extra powdered sugar.
  • For a Softer Texture: Use butter instead of oil in the brownie mixture.
