Description

These Mini Loaded Potatoes are the perfect St. Patrick’s Day appetizer, featuring crispy roasted baby potatoes topped with creamy sour cream, fresh green onions, and sweet red bell peppers. A simple yet delicious Irish-inspired party snack that’s great for any gathering!

Ingredients

Units Scale
  • 12 baby potatoes (red or gold)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced red bell peppers
  • 1/2 tsp salt & black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the potatoes: Toss baby potatoes with olive oil, salt, and black pepper until evenly coated.
  3. Roast the potatoes: Spread the potatoes on the baking sheet and bake for 25–30 minutes, or until tender and slightly crispy on the outside.
  4. Assemble the toppings: Slice open each potato slightly and top with a dollop of sour cream, chopped green onions, and diced red bell peppers.
  5. Serve warm as a festive St. Patrick’s Day party snack!

Notes

  • Add crumbled bacon or shredded cheese for extra flavor.
  • Swap sour cream for Greek yogurt for a lighter option.
  • Try stuffing the potatoes with a spoonful of mashed avocado for a creamy, festive twist.
  • Serve with a side of ranch or garlic aioli for dipping.
