  • 1 stick unsalted butter
  • 1 medium sweet or yellow onion, very finely chopped
  • 23 lbs fresh, good-quality pork sausage
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • ~2 cups whole milk, preheated
  • 1/2 teaspoon freshly grated nutmeg
  • Pinch of cayenne pepper
  • Salt and freshly ground black pepper, to taste

    Cheddar & Green Onion Biscuits

    Ingredients:

    • 3 cups cake flour
    • 3 cups all-purpose flour
    • 2 sticks chilled butter, cut into slices
    • 2 cups shredded sharp cheddar cheese, frozen
    • 1 tablespoon kosher salt
    • 2 tablespoons baking powder
    • 1/2 cup finely chopped green onions (optional)
    • ~2 cups chilled cream

Instructions

1️⃣ Caramelize the Onions:

  • In a medium Dutch oven over medium heat, melt butter and sauté onions until deeply caramelized, stirring often.
  • Remove onions and set aside.

2️⃣ Cook the Sausage:

  • Spray the Dutch oven with nonstick spray.
  • Add pork sausage and cook until heavily browned.

3️⃣ Make the Roux:

  • Return the caramelized onions to the pan.
  • Stir in flour until fully incorporated and no white specks remain.

4️⃣ Add Milk & Simmer:

  • Slowly add the hot milk mixture, whisking constantly to avoid lumps.
  • Scrape up any browned bits for extra flavor.
  • Increase heat to medium-high, stirring constantly until it starts to simmer.
  • Reduce heat to low and let the gravy thicken.
  • Add nutmeg, cayenne, salt, and pepper to taste. 

    Instructions:

    1️⃣ Preheat Oven:

    • 350°F (convection) or 375°F (standard).

    2️⃣ Process the Flour & Butter:

    • In a food processor, pulse cake flour with 1 stick of butter until only small specks of butter remain.
    • Transfer to a stand mixer bowl and repeat with all-purpose flour.

    3️⃣ Mix the Dough:

    • Add frozen shredded cheddar, salt, baking powder, and green onions.
    • Mix on low speed to combine.
    • Freeze mixture for 20 minutes.

    4️⃣ Add Cream & Shape the Biscuits:

    • Slowly mix in chilled cream until a wet, sticky dough forms.
    • Do not overmix—ensure there’s no dry flour at the bottom.

    5️⃣ Bake the Biscuits:

    • Grease a half-sheet pan and spread the dough evenly, pressing it into the corners.
    • Bake, turning the pan once, until golden brown, about 25 minutes.

Notes

  • For extra-flaky biscuits, keep all ingredients cold and handle the dough as little as possible.
  • Adjust gravy consistency by adding more milk if it gets too thick.
  • Serve with hot sauce or extra cracked black pepper for a flavorful kick.
