  • 1 cup lemon sparkling water (or non-alcoholic Prosecco)
  • 1 oz lemon juice (optional, for extra tartness)
  • Ice (for serving)
  • Lemon slice or thyme sprig (for garnish, optional)

Instructions

Step 1: Make the Lemon Oleo Saccharum (1 Day Ahead)

  1. Peel the lemons, ensuring minimal white pith.
  2. In a jar, combine lemon peels with an equal weight of sugar (about 1.5 oz sugar per lemon).
  3. Muddle the mixture slightly, then cover and let sit overnight at room temperature.
  4. The next day, strain through a fine mesh sieve, pressing to extract all liquid. Store in an airtight container.

Step 2: Make the Mocktail

  1. Fill a large wine glass with ice.
  2. Add 1-1.5 oz of the lemon oleo saccharum.
  3. Pour in lemon sparkling water or non-alcoholic Prosecco.
  4. Taste and add 1 oz lemon juice if desired.
  5. Garnish with a lemon slice or thyme sprig and enjoy!

  • Oleo saccharum is flexible—just ensure the lemon peels are fully coated in sugar.
