- 1 cup lemon sparkling water (or non-alcoholic Prosecco)
- 1 oz lemon juice (optional, for extra tartness)
- Ice (for serving)
- Lemon slice or thyme sprig (for garnish, optional)
Instructions
Step 1: Make the Lemon Oleo Saccharum (1 Day Ahead)
- Peel the lemons, ensuring minimal white pith.
- In a jar, combine lemon peels with an equal weight of sugar (about 1.5 oz sugar per lemon).
- Muddle the mixture slightly, then cover and let sit overnight at room temperature.
- The next day, strain through a fine mesh sieve, pressing to extract all liquid. Store in an airtight container.
Step 2: Make the Mocktail
- Fill a large wine glass with ice.
- Add 1-1.5 oz of the lemon oleo saccharum.
- Pour in lemon sparkling water or non-alcoholic Prosecco.
- Taste and add 1 oz lemon juice if desired.
- Garnish with a lemon slice or thyme sprig and enjoy!
