Description

For the Dough:

  • 1 cup active sourdough starter (or discard)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 3/4 cup warm water
  • 1 tablespoon olive oil

For the Topping:

  • 1/2 small onion, thinly sliced
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

. Prepare the Dough:

  1. In a large bowl, combine sourdough starter, flour, salt, sugar, warm water, and olive oil.
  2. Knead the dough for 8-10 minutes until smooth and elastic.
  3. Cover and let rest for 4-6 hours (or overnight for deeper sourdough flavor).

2. Shape the Flatbread:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Divide dough into 4 equal portions and stretch into flatbread shapes.
  3. Brush each flatbread with olive oil, then top with onion slices, cheese, oregano, and black pepper.

3. Bake & Serve:

  1. Bake for 15-18 minutes, or until golden brown and crispy.
  2. Let cool slightly before serving warm.

Notes

  • Swap cheddar for feta or gouda for a different cheese flavor.
