- 1 cup active sourdough starter (or discard)
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 3/4 cup warm water
- 1 tablespoon olive oil

- 1/2 small onion, thinly sliced
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
. Prepare the Dough:
- In a large bowl, combine sourdough starter, flour, salt, sugar, warm water, and olive oil.
- Knead the dough for 8-10 minutes until smooth and elastic.
- Cover and let rest for 4-6 hours (or overnight for deeper sourdough flavor).
2. Shape the Flatbread:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Divide dough into 4 equal portions and stretch into flatbread shapes.
- Brush each flatbread with olive oil, then top with onion slices, cheese, oregano, and black pepper.
3. Bake & Serve:
- Bake for 15-18 minutes, or until golden brown and crispy.
- Let cool slightly before serving warm.
