Crispy on the outside, soft on the inside—these sourdough discard breadsticks are packed with melted cheese, garlic, and herbs, making them the perfect savory snack or appetizer!

Ingredients

Scale

For the Dough:

  • 1 cup sourdough discard
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 cup warm water
  • 2 tablespoons olive oil

For the Topping:

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder

Instructions

1. Prepare the Dough:

  1. In a bowl, combine sourdough discard, flour, salt, sugar, garlic powder, oregano, warm water, and olive oil.
  2. Knead for 8-10 minutes until smooth.
  3. Cover and let rest for 30 minutes.

2. Shape the Breadsticks:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the dough into a rectangle about ½-inch thick.
  3. Brush with melted butter and sprinkle with mozzarella, Parmesan, parsley, and garlic powder.

3. Bake & Serve:

  1. Bake for 15-18 minutes, or until golden brown and crispy.
  2. Let cool slightly, then slice into breadsticks.
  3. Serve with marinara sauce, ranch, or your favorite dip.

Notes

  • For extra cheesiness, sprinkle more mozzarella on top before baking.
  • Swap oregano for Italian seasoning for a more herbaceous flavor.
  • Store in an airtight container and reheat in the oven for best crispiness.
