Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 cup chicken broth
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Add Ingredients: Place chicken, black beans, corn, diced tomatoes, onion, cumin, chili powder, garlic powder, and chicken broth into a slow cooker.
  2. Cook: Cover and cook on low for 6 hours or high for 3–4 hours, until the chicken is tender.
  3. Shred the Chicken: Remove the chicken, shred it with two forks, then stir it back into the chili.
  4. Serve & Garnish: Ladle into bowls and top with shredded cheese, sour cream, fresh cilantro, and a squeeze of lime.

Notes

  • For a thicker chili, mash some of the beans before serving.
  • Swap chicken breasts for chicken thighs for extra tenderness.
  • Make it spicier by adding diced jalapeños or extra chili powder.
