- 1 lb smoked sausage (sliced)
- 4 medium potatoes (diced)
- 2 cups kale (chopped)
- 1 small onion (diced)
- 4 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp red pepper flakes (optional)
- 1 tsp black pepper
- Salt to taste
- 2 tbsp olive oil
Instructions
- Sauté the Sausage – Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- Cook Aromatics – In the same pot, sauté onion and garlic until fragrant.
- Simmer the Potatoes – Add diced potatoes, chicken broth, black pepper, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
- Add Kale & Sausage – Stir in chopped kale and cooked sausage. Simmer for 5 more minutes.
- Finish with Cream – Lower the heat and stir in heavy cream. Cook for another 2-3 minutes without boiling.
- Season & Serve – Adjust seasoning with salt and pepper to taste. Serve hot and enjoy!

- For a lighter version, use half-and-half instead of heavy cream.
- Swap smoked sausage for Italian sausage for a different flavor.
- To thicken the soup, mash some of the potatoes before adding the kale.
