Ingredients

  • 1 lb smoked sausage (sliced)
  • 4 medium potatoes (diced)
  • 2 cups kale (chopped)
  • 1 small onion (diced)
  • 4 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp red pepper flakes (optional)
  • 1 tsp black pepper
  • Salt to taste
  • 2 tbsp olive oil

Instructions

  1. Sauté the Sausage – Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  2. Cook Aromatics – In the same pot, sauté onion and garlic until fragrant.
  3. Simmer the Potatoes – Add diced potatoes, chicken broth, black pepper, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  4. Add Kale & Sausage – Stir in chopped kale and cooked sausage. Simmer for 5 more minutes.
  5. Finish with Cream – Lower the heat and stir in heavy cream. Cook for another 2-3 minutes without boiling.
  6. Season & Serve – Adjust seasoning with salt and pepper to taste. Serve hot and enjoy!

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Swap smoked sausage for Italian sausage for a different flavor.
  • To thicken the soup, mash some of the potatoes before adding the kale.
