Ingredients
- 2 (6 oz) cans salmon, drained & flaked (or 1 1/2 cups cooked fresh salmon)
- 1/2 cup breadcrumbs (or crushed crackers)
- 1 egg, beaten
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp Old Bay seasoning
- 2 tbsp chopped parsley
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (for frying)
Instructions
-
Prepare the mixture – In a large bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, Old Bay seasoning, parsley, garlic powder, salt, and black pepper. Mix well until combined.
-
Form the croquettes – Shape the mixture into 4-5 patties. If too soft, refrigerate for 15 minutes to firm up.
-
Cook the croquettes – Heat olive oil in a skillet over medium heat. Cook the croquettes for 3-4 minutes per side, or until golden brown and crispy.
-
Serve and enjoy – Serve warm with lemon wedges, tartar sauce, or remoulade.
Notes
- Swap breadcrumbs for almond flour to make these low-carb/keto-friendly.
- Use fresh salmon (cooked and flaked) instead of canned for a richer flavor.
- Add chopped green onions or a pinch of cayenne pepper for extra zest.
- Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
