Description

Soft, flaky brioche rolls brushed with a rich honey butter infused with sage and topped with flaky sea salt. A perfect balance of sweet, savory, and buttery goodness—ideal for any meal or special occasion!

For the Brioche Rolls:

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1/4 cup sugar
  • 1 tsp salt
  • 1/2 cup warm milk
  • 3 large eggs
  • 1/2 cup unsalted butter, softened

For the Honey Butter Glaze:

  • 1/4 cup unsalted butter
  • 2 tbsp honey
  • 1 tbsp fresh sage, finely chopped
  • 1/2 tsp flaky sea salt

Instructions

  1. Prepare the Dough – In a mixing bowl, combine flour, yeast, sugar, and salt.
  2. Mix & Knead – Add warm milk and eggs, mixing until a dough forms. Knead in softened butter, one tablespoon at a time, until smooth and elastic.
  3. First Rise – Cover and let the dough rise in a warm place for 1-2 hours, or until doubled in size.
  4. Shape the Rolls – Divide the dough into 12 portions and shape into rolls. Place them in a greased baking dish.
  5. Second Rise – Cover and let rise again for 30-45 minutes.
  6. Bake – Preheat oven to 375°F (190°C). Bake for 18-20 minutes, until golden brown.
  7. Prepare the Glaze – While baking, melt butter in a small saucepan, then stir in honey and chopped sage.
  8. Glaze & Serve – Brush the warm rolls with the honey butter and sprinkle with flaky sea salt. Serve warm and enjoy!


Notes

  • For an extra flaky texture, use bread flour instead of all-purpose flour.
  • These rolls can be made ahead and frozen; reheat before serving.
  • Swap sage for thyme or rosemary for a different herb-infused butter.
