Description

This Rustic Summer Plum Tart is a beautifully simple, naturally sweet, and gluten-free dessert featuring juicy, ripe plums nestled in a tender almond-flour crust. For the Tart:

  • 24 ripe plums or apricots (pitted & sliced 1/41/2 inch thick)
  • 1/2 cup organic cane sugar (plus extra for dusting the pan)
  • 1/4 cup softened vegan butter
  • 2 tbsp unsweetened applesauce
  • 1/2 tsp almond extract (optional, for extra nutty flavor)

For the Dry Ingredients:

  • 1 1/2 cups almond flour (Wellbee’s recommended)
  • 1/2 cup potato starch
  • 1/4 cup brown rice flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp sea salt

For the Liquid Ingredients:

  • 1/2 cup dairy-free milk (plain, unsweetened almond milk used)


Instructions

1. Prepare the Oven & Pan:

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9-inch pie pan and dust with a little cane sugar for a crisp crust.

2. Make the Batter:

  1. In a mixing bowl, cream together vegan butter and sugar until smooth.
  2. Stir in the applesauce and almond extract until combined.
  3. In a separate bowl, whisk together almond flour, potato starch, brown rice flour, baking powder, and sea salt.
  4. Gradually mix the dry ingredients into the wet ingredients, alternating with dairy-free milk, until a smooth batter forms.

3. Assemble the Tart:

  1. Pour the batter into the prepared pie pan, spreading it evenly.
  2. Arrange the plum slices in a circular pattern on top of the batter, slightly overlapping.
  3. Lightly sprinkle with cane sugar for caramelization.

4. Bake the Tart:

  1. Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  2. Let cool for 10-15 minutes before slicing.

5. Serve & Enjoy:

  • Serve warm or at room temperature with coconut whipped cream or a scoop of vegan vanilla ice cream.
