Description

These Roasted Carrots are a sweet and savory Easter side dish, perfect for complementing any holiday dinner. Roasted to caramelized perfection with a touch of olive oil and seasonings, these easy oven-baked carrots pair beautifully with ham, lamb, or any Easter feast.

Ingredients

Scale
  • 1 lb baby carrots (or whole carrots, peeled and sliced)
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup (optional for sweetness)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme or parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss carrots with olive oil, salt, pepper, and honey/maple syrup (if using).
  3. Spread carrots in a single layer on the baking sheet.
  4. Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  5. Garnish with fresh thyme or parsley before serving.

Notes

  • For extra flavor, add a sprinkle of garlic powder or balsamic vinegar before roasting.
  • Use rainbow carrots for a colorful presentation.
  • Serve with a dollop of herbed butter or tahini drizzle for added richness.
