A classic deli-style sandwich featuring tender corned beef, tangy sauerkraut, melted Swiss cheese, and creamy Russian dressing, all grilled between buttery rye bread.

- 8 slices rye bread
- 4 tbsp unsalted butter, softened
- 1/2 cup Russian dressing (or Thousand Island dressing)
- 1 lb corned beef, thinly sliced
- 8 slices Swiss cheese
- 1 cup sauerkraut, drained
Instructions
- Preheat a skillet over medium heat.
- Butter one side of each slice of rye bread.
- Assemble the sandwiches: Spread Russian dressing on the unbuttered side of 4 bread slices.
- Layer with Swiss cheese, corned beef, sauerkraut, and another slice of cheese.
- Top with the remaining bread slices, buttered side facing out.
- Grill the sandwiches in the skillet for 3-4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheese is melted.
- Serve hot with pickles and chips on the side.
Notes
- For extra crispiness, cook the sandwich on low heat for a longer time to fully melt the cheese.
- Prefer a thicker sandwich? Add more corned beef for an extra hearty bite.
- Swap Russian dressing for Thousand Island if you prefer a slightly sweeter taste.
