Description

A classic deli-style sandwich featuring tender corned beef, tangy sauerkraut, melted Swiss cheese, and creamy Russian dressing, all grilled between buttery rye bread.


Ingredients

  • 8 slices rye bread
  • 4 tbsp unsalted butter, softened
  • 1/2 cup Russian dressing (or Thousand Island dressing)
  • 1 lb corned beef, thinly sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained

Instructions

  • Preheat a skillet over medium heat.
  • Butter one side of each slice of rye bread.
  • Assemble the sandwiches: Spread Russian dressing on the unbuttered side of 4 bread slices.
  • Layer with Swiss cheese, corned beef, sauerkraut, and another slice of cheese.
  • Top with the remaining bread slices, buttered side facing out.
  • Grill the sandwiches in the skillet for 3-4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheese is melted.
  • Serve hot with pickles and chips on the side.

Notes

  • For extra crispiness, cook the sandwich on low heat for a longer time to fully melt the cheese.
  • Prefer a thicker sandwich? Add more corned beef for an extra hearty bite.
  • Swap Russian dressing for Thousand Island if you prefer a slightly sweeter taste.
