- 1 1/2 lbs potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Bring a pot of salted water to a boil. Add diced potatoes and parboil for 5 minutes. Drain and pat dry to remove excess moisture.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add onions and cook until soft and caramelized, about 5 minutes.
- Stir in garlic, paprika, salt, pepper, oregano, and red pepper flakes.
- Add the parboiled potatoes to the pan, stirring occasionally, until crispy and golden brown, about 10-12 minutes.
- Garnish with fresh parsley and serve hot as a side dish.
Notes
- For extra crispiness, let the potatoes cook undisturbed for a couple of minutes before stirring.
- Use Yukon Gold or waxy potatoes for the best texture.
- Add a splash of white wine for a richer Portuguese touch.
