Produce:

  • 1 large Russet potato, cut into fries

Baking & Spices:

  • 3/4 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper (adjust for spice level)
  • Salt, to taste

Oils & Vinegars:

  • Vegetable oil, for frying

Instructions

1. Prepare the Potatoes:

  1. Wash and peel the Russet potato, then cut into thin fries (about ¼-inch thick).
  2. Soak the fries in cold water for 15-20 minutes to remove excess starch.
  3. Drain and pat dry with a paper towel.

2. Fry the Fries:

  1. Heat vegetable oil in a deep fryer or pot to 350°F (175°C).
  2. Fry the potatoes in batches for 3-4 minutes, or until lightly golden.
  3. Remove and drain on a paper towel.

3. Season & Crisp Up:

  1. Increase oil temperature to 375°F (190°C).
  2. Fry the potatoes again for 2-3 more minutes, until crispy and golden brown.
  3. Immediately toss the hot fries with garlic powder, oregano, paprika, cayenne, and salt.

4. Serve & Enjoy:

  1. Serve hot with your favorite dipping sauces like ranch, ketchup, or Cajun mayo!

Notes

  • For baked fries, toss potatoes with 1 tbsp oil and bake at 425°F (220°C) for 30-35 minutes, flipping halfway.
  • For air fryer fries, cook at 380°F (193°C) for 15-18 minutes, shaking the basket halfway through.
  • Adjust cayenne for more or less spice!
