Ingredients
For the Crust:

1/2 cup unsalted butter, softened

1/3 cup light brown sugar, packed

1 large egg yolk

1 1/4 cups all-purpose flour

For the Filling:

3/4 cup chopped pecans

1/2 cup packed light brown sugar

1/4 cup light corn syrup

1 tbsp unsalted butter, melted

1/2 tsp vanilla extract

Pinch of salt

1 large egg
Instructions

Preheat oven to 350°F (175°C). Grease a mini muffin pan generously.

In a bowl, cream butter and brown sugar until fluffy. Add egg yolk and beat until well combined.

Mix in flour and salt until a dough forms.

Roll dough into 1-inch balls and press into each mini muffin cup to form small shells.

In another bowl, whisk together egg, brown sugar, corn syrup, melted butter, vanilla, and salt. Stir in chopped pecans.

Spoon pecan filling into each crust shell, filling nearly to the top.

Bake for 18–20 minutes until the crust is golden and filling is set.

Cool completely in the pan before carefully removing.
