Instructions
1. Preheat & Prepare Cake Pans
- Preheat oven to 350°F (175°C).
- Grease and line three 8-inch round cake pans with parchment paper.
2. Make the Vanilla Cake Batter
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Gradually add dry ingredients, alternating with milk, until fully combined.
3. Bake & Cool
- Divide batter evenly among cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
4. Prepare the Pastel Buttercream Frosting
- Beat butter until creamy.
- Gradually add powdered sugar, mixing well.
- Add heavy cream and vanilla extract, whipping until smooth and fluffy.
- Divide into separate bowls and tint with pastel gel food coloring.
5. Assemble the Cake
- Place the first cake layer on a serving plate and spread a layer of whipped cream or light buttercream filling.
