- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup orange juice
- Zest of 1 orange

- 1/2 cup pineapple chunks
- 1/2 cup mandarin orange slices
- 1 cup whipped cream

Instructions
Prepare the Crust:
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Refrigerate for 30 minutes to set.
2. Make the Filling:
- In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth and creamy.
- Add eggs one at a time, beating well after each addition.
- Mix in sour cream, vanilla extract, orange juice, and orange zest until fully incorporated.
3. Assemble the Cheesecake:
- Pour half of the cream cheese mixture over the chilled crust.
- Evenly distribute half of the pineapple chunks and mandarin orange slices on top of the layer.
- Pour the remaining cream cheese mixture over the fruit.
