Description

This Chicken with Garlic Parmesan Cream Sauce is a rich, comforting one-pot meal perfect for any night of the week. Tender chicken is simmered in a creamy, garlicky Parmesan sauce and served alongside buttery mashed potatoes for a restaurant-quality dinner at home. For the Chicken & Sauce:

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 1 teaspoon basil, dried
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Fresh parsley, for garnish

For the Mashed Potatoes:

  • 2 large potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup heavy cream or milk
  • Salt and pepper, to taste

Instructions

1. Prepare the Mashed Potatoes:

  1. Place the cubed potatoes in a pot of cold, salted water. Bring to a boil and cook until tender (about 15 minutes).
  2. Drain and mash the potatoes with butter, heavy cream (or milk), salt, and pepper until smooth and creamy. Set aside.

2. Cook the Chicken:

  1. Season both sides of the chicken breasts or thighs with basil, black pepper, Italian seasoning, and salt.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.

3. Make the Garlic Parmesan Sauce:

  1. In the same skillet, reduce the heat to medium and add butter and minced garlic. Sauté for 1 minute until fragrant.
  2. Pour in the heavy cream and stir well, scraping any browned bits from the pan.
  3. Reduce the heat to low and gradually add the grated Parmesan cheese, stirring constantly until melted and smooth.
  4. Return the chicken to the skillet, spoon the sauce over the top, and let it simmer for 5 minutes.

4. Serve & Enjoy:

  1. Plate the mashed potatoes and top with the garlic Parmesan chicken.
  2. Spoon extra sauce over the chicken and potatoes.
  3. Garnish with fresh parsley and serve warm!

  • Best Chicken Choice: Thighs stay juicier, but breasts work well too!
