For the Chicken & Sauce:
- 1 1/2 lbs boneless, skinless chicken breasts or thighs
- 1 teaspoon basil, dried
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1 teaspoon salt
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon unsalted butter
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Fresh parsley, for garnish
For the Mashed Potatoes:
- 2 large potatoes, peeled and cubed
- 2 tablespoons butter
- 1/4 cup heavy cream or milk
- Salt and pepper, to taste
Instructions
1. Prepare the Mashed Potatoes:
- Place the cubed potatoes in a pot of cold, salted water. Bring to a boil and cook until tender (about 15 minutes).
- Drain and mash the potatoes with butter, heavy cream (or milk), salt, and pepper until smooth and creamy. Set aside.
2. Cook the Chicken:
- Season both sides of the chicken breasts or thighs with basil, black pepper, Italian seasoning, and salt.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
3. Make the Garlic Parmesan Sauce:
- In the same skillet, reduce the heat to medium and add butter and minced garlic. Sauté for 1 minute until fragrant.
- Pour in the heavy cream and stir well, scraping any browned bits from the pan.
- Reduce the heat to low and gradually add the grated Parmesan cheese, stirring constantly until melted and smooth.
- Return the chicken to the skillet, spoon the sauce over the top, and let it simmer for 5 minutes.
4. Serve & Enjoy:
- Plate the mashed potatoes and top with the garlic Parmesan chicken.
- Spoon extra sauce over the chicken and potatoes.
- Garnish with fresh parsley and serve warm!
