Description

These M&M Sugar Cookie Bars are the perfect combination of soft, chewy sugar cookies and colorful, crunchy M&Ms in an easy-to-make bar form! Made in just one bowl, these fun and festive cookie bars are perfect for parties, holidays, or when you need a quick and delicious treat.

Ingredients

Units Scale
  • 1/2 cup butter, softened (1 stick)
  • 3/4 cup white sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour (7.4 oz)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup M&Ms (plus more for topping, if desired)

Instructions

1. Prep the Oven & Pan:

  1. Preheat oven to 350°F (175°C).
  2. Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.

2. Make the Cookie Dough:

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, then mix until smooth.
  3. Stir in the flour, baking powder, and salt until just combined.
  4. Fold in the M&Ms (if mixing them into the dough).

3. Bake the Bars:

  • Option 1: If you want M&Ms mixed inside, spread the dough evenly into the prepared pan and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Option 2: If you want M&Ms on top, bake for 10 minutes, then sprinkle M&Ms over the surface and return to the oven for another 10 minutes.

4. Cool & Serve:

  1. Let the bars cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Soft & Chewy Tip: Slightly underbake for an extra gooey texture.
  • Variations: Swap M&Ms for chocolate chips, sprinkles, or peanut butter chips.
  • Storage: Keep in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
