  • 45 garlic cloves (crushed)
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Salt (to taste)
  • 3 tbsp olive oil
  • 1 cup water (adjust as needed)
  • 24 eggs (optional)
  • Red chili flakes (optional, for heat)

Instructions

  • Sauté Aromatics – Heat olive oil in a pot over medium heat. Add crushed garlic and paprika, sautéing until fragrant.
  • Cook the Potatoes – Add potato chunks, season with salt and black pepper, and stir well.
  • Simmer – Pour in just enough water to cover the potatoes. Add half of the fresh pouliot and bring to a gentle simmer.
  • Cover & Cook – Reduce heat to low, cover, and let the potatoes cook until tender and the sauce thickens.
