Ingredients
Scale
- 1 kg potatoes (peeled and cut into chunks)
- 1 bunch fresh pouliot (wild mint) – leaves only
- 4–5 garlic cloves (crushed)
- 1/2 tsp paprika
- 1/4 tsp black pepper
- Salt (to taste)
- 3 tbsp olive oil
- 1 cup water (adjust as needed)
- 2–4 eggs (optional)
- Red chili flakes (optional, for heat)
Instructions
- Sauté Aromatics – Heat olive oil in a pot over medium heat. Add crushed garlic and paprika, sautéing until fragrant.
- Cook the Potatoes – Add potato chunks, season with salt and black pepper, and stir well.
- Simmer – Pour in just enough water to cover the potatoes. Add half of the fresh pouliot and bring to a gentle simmer.
- Cover & Cook – Reduce heat to low, cover, and let the potatoes cook until tender and the sauce thickens.
- Enhance the Flavor – A few minutes before the dish is done, stir in the remaining pouliot for a fresh, minty aroma.
- Optional Eggs – If using eggs, create small wells between the potatoes and crack the eggs in. Cover and cook until the egg whites are set but the yolks remain slightly runny.
- Serve & Enjoy – Garnish with extra fresh pouliot and a sprinkle of red chili flakes for heat. Serve hot!
Notes
- Pouliot (wild mint) has a strong, earthy flavor; if unavailable, substitute with a mix of spearmint and oregano.
- For a heartier meal, serve with crusty bread or a side of yogurt.
- Adjust the water amount to achieve your desired consistency—thicker for a stew-like dish or thinner for a brothy version.
