Description

Light and fluffy cupcakes infused with fresh mint and a hint of bourbon, topped with a silky buttercream frosting. A delicious tribute to the classic Kentucky Derby cocktail!

For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup bourbon
  • 1/4 cup whole milk
  • 1/4 cup fresh mint leaves, finely chopped

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream (as needed)


Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt.
  3. Cream Butter & Sugar: In a separate bowl, beat butter and sugar until light and fluffy.
  4. Add Wet Ingredients: Add eggs one at a time, mixing well. Stir in vanilla extract, bourbon, and milk.
  5. Combine & Add Mint: Gradually add the dry ingredients and mix until just combined. Stir in the chopped mint.
  6. Bake: Divide batter among cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  7. Prepare the Frosting: Beat butter and powdered sugar until fluffy. Add bourbon, vanilla, and heavy cream, then beat until smooth.
  8. Frost & Garnish: Pipe frosting onto cooled cupcakes and garnish with fresh mint leaves.


Notes

  • For a non-alcoholic version, replace bourbon with an equal amount of milk and a splash of vanilla extract.
  • For extra mint flavor, steep mint leaves in the milk before adding to the batter.
  • Store cupcakes in an airtight container at room temperature for up to 2 days or in the fridge for longer freshness.
