For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup bourbon
- 1/4 cup whole milk
- 1/4 cup fresh mint leaves, finely chopped
For the Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons bourbon
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream (as needed)
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt.
- Cream Butter & Sugar: In a separate bowl, beat butter and sugar until light and fluffy.
- Add Wet Ingredients: Add eggs one at a time, mixing well. Stir in vanilla extract, bourbon, and milk.
- Combine & Add Mint: Gradually add the dry ingredients and mix until just combined. Stir in the chopped mint.
- Bake: Divide batter among cupcake liners and bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- Prepare the Frosting: Beat butter and powdered sugar until fluffy. Add bourbon, vanilla, and heavy cream, then beat until smooth.
- Frost & Garnish: Pipe frosting onto cooled cupcakes and garnish with fresh mint leaves.
Notes
- For a non-alcoholic version, replace bourbon with an equal amount of milk and a splash of vanilla extract.
- For extra mint flavor, steep mint leaves in the milk before adding to the batter.
- Store cupcakes in an airtight container at room temperature for up to 2 days or in the fridge for longer freshness.
