  • 1 pint cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 2 green onions, sliced
  • 1/2 teaspoon dried oregano
  • 1 red bell pepper, diced

Baking & Spices:

  • Kosher salt and freshly ground black pepper, to taste

Oils & Vinegars:

  • 1 tablespoon olive oil

Dairy:

  • 2 tablespoons crumbled feta cheese

Instructions

1. Cook the Ground Beef:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground beef, breaking it apart with a spatula. Season with salt, pepper, and oregano. Cook for 5-7 minutes until browned.

2. Sauté the Vegetables:

  1. Add the minced garlic and diced red bell pepper. Cook for 2 minutes, stirring frequently.
  2. Stir in the cherry tomatoes and baby spinach. Cook for another 2-3 minutes, until the spinach wilts and the tomatoes soften.

3. Finish & Serve:

  1. Remove from heat and stir in green onions.
  2. Sprinkle with crumbled feta cheese just before serving.
  3. Serve warm on its own or over rice, quinoa, or pita bread.
