Description

Delicate and buttery, these Lemon Madeleines are a classic French treat with a light, fluffy texture and a hint of fresh lemon zest. With their signature shell shape and golden edges, they are perfect with tea or coffee and a dusting of powdered sugar.

  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp baking powder
  • Zest and juice of 1 lemon
  • 1 pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the oven & pan:

    • Preheat the oven to 350°F (180°C).
    • Grease a madeleine pan with butter or non-stick spray.
  2. Make the batter:

    • In a bowl, whisk eggs and sugar together until light and fluffy.
    • Gently fold in the flour, baking powder, and salt until just combined.
    • Add the melted butter, lemon zest, and lemon juice, stirring until smooth.
  3. Chill the batter:

    • Cover and refrigerate for 1 hour—this helps create the signature hump.
  4. Bake the madeleines:

    • Fill each madeleine mold about 3/4 full.
    • Bake for 10-12 minutes, until the edges are golden and the centers are slightly domed.
  5. Cool & serve:

    • Let cool for a few minutes before unmolding.
    • Dust with powdered sugar if desired.
