- 1/2 cup unsalted butter, melted

- 2 large eggs
- 1 tsp baking powder

Prepare the oven & pan:
- Preheat the oven to 350°F (180°C).
- Grease a madeleine pan with butter or non-stick spray.

Make the batter:
- In a bowl, whisk eggs and sugar together until light and fluffy.
- Gently fold in the flour, baking powder, and salt until just combined.
- Add the melted butter, lemon zest, and lemon juice, stirring until smooth.

Chill the batter:
- Cover and refrigerate for 1 hour—this helps create the signature hump.

Bake the madeleines:
- Fill each madeleine mold about 3/4 full.
- Bake for 10-12 minutes, until the edges are golden and the centers are slightly domed.

- Let cool for a few minutes before unmolding.
- Dust with powdered sugar if desired.
