Description

This Lemon Lush Dessert is a refreshing layered treat featuring a buttery pecan crust, a smooth cream cheese layer, tangy lemon pudding, and fluffy whipped topping. A cool, no-fuss dessert perfect for spring, summer, or anytime you’re craving citrusy sweetness.

Ingredients

For the crust:

  • 1 cup all-purpose flour

  • 1/2 cup unsalted butter, melted

  • 1/2 cup finely chopped pecans

For the cream cheese layer:

  • 1 (8 oz) block cream cheese, softened

  • 1 cup powdered sugar

  • 1 cup whipped topping (Cool Whip or homemade)

For the lemon layer:

  • 2 (3.4 oz) boxes instant lemon pudding mix

  • 2 3/4 cups cold milk

For the topping:

  • 1 1/2 cups whipped topping (Cool Whip or homemade)

  • Chopped pecans for garnish (optional)

Instructions

  • Preheat oven to 350°F (175°C).

  • In a bowl, mix flour, melted butter, and chopped pecans. Press into a 9×13-inch pan and bake for 15–20 minutes, or until lightly golden. Cool completely.

  • Beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping and spread over cooled crust.

  • In another bowl, whisk together pudding mix and milk until thickened (about 2–3 minutes). Spread over cream cheese layer.

  • Top with remaining whipped topping and smooth evenly.

  • Chill in the refrigerator for at least 4 hours, or until set.

  • Sprinkle chopped pecans on top before serving, if desired.

Notes

  • For extra lemon punch, use fresh lemon zest in the pudding layer.

  • You can substitute vanilla pudding or make a strawberry version too.

  • Best served chilled straight from the fridge!
