For the Burger Patties:

- 1 tbsp brown sugar
For the Korean BBQ Sauce:
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp gochujang
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch (mixed with 1 tbsp water)
- 1 tbsp sesame seeds
For the Kimchi Slaw:
- 1 cup shredded cabbage
- 1/2 cup chopped kimchi
- 2 tbsp mayonnaise
- 1 tsp sesame oil
- 1/2 tsp chili flakes
- 1 green onion (sliced)
For Assembly:
- 4 brioche buns (toasted)
- 1 tbsp butter
- 1 tbsp sesame seeds
Instructions
- Prepare the Burger Patties: In a bowl, mix ground beef with soy sauce, sesame oil, gochujang, garlic, ginger, black pepper, and brown sugar. Form into patties and chill for 15 minutes.
- Make the BBQ Sauce: In a saucepan, combine soy sauce, honey, gochujang, rice vinegar, and sesame oil. Simmer for 5 minutes, then add the cornstarch slurry to thicken. Stir in sesame seeds and set aside.
- Prepare the Kimchi Slaw: In a bowl, mix shredded cabbage, chopped kimchi, mayo, sesame oil, chili flakes, and sliced green onion. Let sit for 10 minutes.
- Cook the Patties: Heat a grill or pan over medium-high heat. Cook burgers for 3-4 minutes per side, brushing with BBQ sauce in the last minute of cooking.
- Assemble the Burgers: Spread butter on toasted brioche buns, place a BBQ-glazed patty, top with kimchi slaw, and sprinkle with sesame seeds. Serve warm.
