  • 4 boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 fresh jalapeño (sliced)
  • 2 peaches (sliced)
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1/2 cup chicken broth
  • 2 tbsp butter
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken thighs with salt, pepper, and smoked paprika.
  • Sear chicken for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.
  • In the same skillet, add sliced jalapeños and peaches, cooking for 2 minutes until softened.
  • Stir in honey, Dijon mustard, and chicken broth. Simmer for 2 minutes.
  • Add chicken back to the skillet, cover, and cook for 10 more minutes until fully cooked.
  • Stir in butter for a rich, glossy sauce.
  • Garnish with fresh parsley and serve hot.

Notes

  • For extra heat, leave the jalapeño seeds in or add a pinch of red pepper flakes.
