- 1 fresh jalapeño (sliced)
- 2 peaches (sliced)
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1/2 cup chicken broth
- 2 tbsp butter
- 1 tbsp fresh parsley (chopped, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt, pepper, and smoked paprika.
- Sear chicken for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add sliced jalapeños and peaches, cooking for 2 minutes until softened.
- Stir in honey, Dijon mustard, and chicken broth. Simmer for 2 minutes.
- Add chicken back to the skillet, cover, and cook for 10 more minutes until fully cooked.
