Description

These classic Italian Amaretti cookies are chewy on the inside, crisp on the outside, and bursting with almond flavor. Perfect with coffee or as a holiday treat!


Ingredients

  • 2 cups almond flour
  • 3/4 cup granulated sugar
  • 2 egg whites
  • 1/2 tsp almond extract
  • Zest of 1 lemon
  • Powdered sugar (for coating)
  • Whole almonds (for topping, optional)

Instructions

1. Preheat & Prep:

  • Preheat oven to 325°F (160°C).
  • Line a baking sheet with parchment paper.

2. Make the Dough:

  • In a bowl, mix almond flour, granulated sugar, and lemon zest.
  • In a separate bowl, beat egg whites until soft peaks form.
  • Gently fold the egg whites and almond extract into the almond flour mixture until a sticky dough forms.

3. Shape & Coat:

  • Roll dough into 1-inch balls.
  • Coat each ball in powdered sugar and place on the baking sheet.
  • Press a whole almond on top of each cookie (optional).

4. Bake:

  • Bake for 15-18 minutes, until slightly golden but still soft in the center.
  • Let them cool completely before serving.

Notes

  • For Crispier Amaretti: Bake a few minutes longer for a crisp texture.
  • Flavor Twist: Add ½ tsp vanilla extract for extra depth.
  • Storage: Keep in an airtight container for up to a week or freeze for 2 months.
