Description
These classic Italian Amaretti cookies are chewy on the inside, crisp on the outside, and bursting with almond flavor. Perfect with coffee or as a holiday treat!

- 2 cups almond flour
- 3/4 cup granulated sugar
- 2 egg whites
- 1/2 tsp almond extract
- Zest of 1 lemon
- Powdered sugar (for coating)
- Whole almonds (for topping, optional)
Instructions
1. Preheat & Prep:
- Preheat oven to 325°F (160°C).
- Line a baking sheet with parchment paper.
2. Make the Dough:
- In a bowl, mix almond flour, granulated sugar, and lemon zest.
- In a separate bowl, beat egg whites until soft peaks form.
- Gently fold the egg whites and almond extract into the almond flour mixture until a sticky dough forms.
3. Shape & Coat:
- Roll dough into 1-inch balls.
- Coat each ball in powdered sugar and place on the baking sheet.
- Press a whole almond on top of each cookie (optional).
4. Bake:
- Bake for 15-18 minutes, until slightly golden but still soft in the center.
- Let them cool completely before serving.
Notes
- For Crispier Amaretti: Bake a few minutes longer for a crisp texture.
- Flavor Twist: Add ½ tsp vanilla extract for extra depth.
- Storage: Keep in an airtight container for up to a week or freeze for 2 months.
