Instructions

  • Prepare the Brownies:

    • Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
    • In a mixing bowl, whisk together melted butter and sugar.
    • Add eggs and vanilla extract, mixing until combined.
    • Sift in flour, cocoa powder, and salt, stirring until just combined.
    • Pour batter into the prepared pan and bake for 20-25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
    • Let brownies cool completely before adding the mint layer.
  • Make the Mint Layer:

    • In a bowl, beat softened butter until smooth.
    • Gradually add powdered sugar, heavy cream, and peppermint extract, mixing until creamy.
    • Add green food coloring if desired.
    • Spread evenly over the cooled brownies and chill for 30 minutes to set.
  • Add the Chocolate Drizzle:

    • Melt the dark chocolate and drizzle over the chilled mint layer.
    • Let set before slicing into 12 brownies.
