Ingredients

Units Scale

Meat

  • 6 thick-cut boneless pork chops

Produce

  • 2 teaspoons garlic, minced
  • 2 tablespoons parsley, chopped (for garnish)

Condiments

  • 1/4 cup honey
  • 1/2 cup ketchup
  • 1/3 cup low-sodium soy sauce

Baking & Spices

  • 2 tablespoons cornstarch (for thickening)
  • Salt and pepper, to taste

Oils & Vinegars

  • 1 tablespoon olive oil

Instructions

1. Sear the Pork Chops (Optional for Extra Flavor)

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the pork chops with salt and pepper, then sear for 1-2 minutes per side until golden brown. (This step enhances flavor but can be skipped.)

2. Prepare the Sauce

  1. In a medium bowl, whisk together honey, ketchup, soy sauce, and garlic.

3. Slow Cook the Pork Chops

  1. Place the pork chops in the slow cooker.
  2. Pour the honey garlic sauce over the pork chops.
  3. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until tender.

4. Thicken the Sauce

  1. In a small bowl, mix 2 tablespoons cornstarch with 2 tablespoons water to make a slurry.
  2. Stir the slurry into the slow cooker during the last 30 minutes of cooking to thicken the sauce.

5. Garnish & Serve

  1. Sprinkle with chopped parsley before serving.
  2. Serve with mashed potatoes, rice, or roasted vegetables. Enjoy!

Notes

  • For bone-in pork chops, increase the cooking time by 30 minutes.
  • Make it spicier by adding red pepper flakes or Sriracha to the sauce.
  • For extra depth, add 1 teaspoon ginger or a splash of apple cider vinegar.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
