Ingredients

For the Filling

  • 4 large eggs, scrambled
  • 1/2 cup bacon or sausage, cooked and crumbled
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup cream cheese, softened
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

For the Pastry

  • 2 tbsp butter, melted
  • 1 large egg, for egg wash
  • Fresh herbs, for garnish

Instructions

Prepare the Filling

  1. Scramble the Eggs – In a pan over medium heat, cook the 4 large eggs until soft and fluffy. Season with salt, pepper, and garlic powder.
  2. Mix in the Cheeses – Stir in cream cheese and shredded cheddar until melted and creamy.
  3. Add the Meat – Mix in cooked bacon or sausage and remove from heat.

Assemble the Pastries

  1. Preheat Oven – Set oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll Out Pastry – Use store-bought pie crust, puff pastry, or homemade dough, rolling it out and cutting into rectangles.
  3. Fill & Seal – Spoon 2 tbsp of filling onto half of the rectangles. Cover with another rectangle, press the edges with a fork, and brush with egg wash.

Bake & Serve

  1. Bake for 15-20 minutes, until golden brown and flaky.
  2. Brush with Butter – Once out of the oven, brush with melted butter and sprinkle with fresh herbs.
  3. Serve & Enjoy!

Notes

  • Customize it! Add diced bell peppers, spinach, or hot sauce for extra flavor.
  • Make Ahead: Store in the fridge for up to 3 days or freeze for up to a month. Reheat in the oven or air fryer.
  • For a flakier texture, use puff pastry instead of pie crust.
