For the Filling
- 4 large eggs, scrambled
- 1/2 cup bacon or sausage, cooked and crumbled
- 1/2 cup cheddar cheese, shredded
- 1/4 cup cream cheese, softened
- 1/2 tsp garlic powder
- Salt and pepper, to taste
For the Pastry
- 2 tbsp butter, melted
- 1 large egg, for egg wash
- Fresh herbs, for garnish
Instructions
Prepare the Filling
- Scramble the Eggs – In a pan over medium heat, cook the 4 large eggs until soft and fluffy. Season with salt, pepper, and garlic powder.
- Mix in the Cheeses – Stir in cream cheese and shredded cheddar until melted and creamy.
- Add the Meat – Mix in cooked bacon or sausage and remove from heat.
Assemble the Pastries
- Preheat Oven – Set oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll Out Pastry – Use store-bought pie crust, puff pastry, or homemade dough, rolling it out and cutting into rectangles.
- Fill & Seal – Spoon 2 tbsp of filling onto half of the rectangles. Cover with another rectangle, press the edges with a fork, and brush with egg wash.
Bake & Serve
- Bake for 15-20 minutes, until golden brown and flaky.
- Brush with Butter – Once out of the oven, brush with melted butter and sprinkle with fresh herbs.

Notes
- Customize it! Add diced bell peppers, spinach, or hot sauce for extra flavor.
- Make Ahead: Store in the fridge for up to 3 days or freeze for up to a month. Reheat in the oven or air fryer.
- For a flakier texture, use puff pastry instead of pie crust.
