Ingredients

  • 2 baked russet potatoes, still warm

  • 2 tbsp unsalted butter, softened

  • Pinch of salt

  • 6+ cups powdered sugar (as needed)

  • 1-2 tsp peppermint extract (to taste)

  • 12 oz chocolate (semisweet, dark, or milk)


Instructions

  • Scoop warm baked potato flesh into a mixing bowl, discarding the skins.

  • Add softened butter and salt, then mash until smooth.

  • Stir in 1 cup powdered sugar. The mixture will liquify—this is normal.

  • Strain the mixture through a fine-mesh sieve to ensure smooth texture.

  • Add peppermint extract and stir to combine.

  • Gradually mix in remaining powdered sugar, kneading until a thick, pliable dough forms.

  • Roll dough into 1-inch balls and flatten into disks. Arrange on a parchment-lined baking sheet.

  • Freeze for at least 2 hours until firm.

  • Melt chocolate in a heat-safe bowl. Dip each frozen patty into chocolate and coat fully using a fork.

 

  • Return dipped patties to parchment paper and let set completely before storing.
