Refrigerated:
- 2 eggs (1 for dough, 1 for egg wash)
Baking & Spices:
- 2 1/2 cups all-purpose or bread flour (plus 1/4 cup for dusting)
- 2 tsp instant yeast
- 1 tsp salt
- 2 tbsp sugar
- 3 tbsp sesame seeds (optional, for topping)
Oils & Vinegars:
- 2 tbsp vegetable oil
Dairy:
- 1 cup milk (reduced fat or whole milk, warmed to 110°F/45°C)
Instructions
1. Make the Dough:
- In a large mixing bowl, combine flour, yeast, salt, and sugar.
- In a separate bowl, whisk together warm milk, 1 egg, and vegetable oil.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
2. Knead & Rise:
- Knead the dough on a lightly floured surface for 8-10 minutes, or until smooth and elastic. (If using a stand mixer, knead with a dough hook on medium speed for 6-8 minutes.)
- Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
3. Shape the Buns:
- Punch down the dough and divide it into 6-8 equal pieces.
- Shape each piece into a smooth ball and place on a parchment-lined baking sheet, spacing them 2 inches apart.
- Cover loosely and let them rise for 30 minutes, until puffy.
4. Apply Egg Wash & Bake:
- Preheat oven to 375°F (190°C).
- Brush the buns with egg wash (1 beaten egg mixed with 1 tsp water) and sprinkle with sesame seeds if desired.
- Bake for 15-18 minutes, or until golden brown.
5. Cool & Serve:
- Let the buns cool on a wire rack for 10 minutes before slicing.
