- 4 ripe avocados, halved and pitted
- 1/2 red onion, peeled and sliced into 1/2-inch thick rounds
- 2 limes, halved
- 1 jalapeño pepper, halved and seeded
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
- Olive oil, for brushing
Instructions
Preheat the Grill
- Set your grill to medium-high heat.
2️⃣ Prepare the Ingredients
- Brush the avocados, onion slices, lime halves, and jalapeño with olive oil.
- Season lightly with salt and pepper.
3️⃣ Grill the Ingredients
- Place the avocados, onions, limes (cut side down), and jalapeño on the grill.
- Grill for about 5 minutes, or until char marks appear.
- Turn the onions and jalapeño as needed for even charring.
- Remove from the grill and let cool slightly.
4️⃣ Assemble the Guacamole
- Scoop the grilled avocado flesh into a bowl and mash to your desired consistency.
- Dice the grilled onion and jalapeño; add them to the mashed avocados.
- Squeeze the grilled limes over the mixture.
- Fold in the cherry tomatoes, cilantro, garlic, and cumin.
- Season with additional salt and pepper to taste.
