- 1 lb fresh green beans (trimmed)
- 2 tbsp butter (or olive oil for a lighter version)
- 1/4 cup sliced almonds
- 1 clove garlic (minced)
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1 tbsp lemon juice (optional, for brightness)
Instructions
1️⃣ Blanch the Green Beans:
- Bring a pot of salted water to a boil.
- Add the green beans and cook for 2-3 minutes until bright green and slightly tender.
- Drain and transfer to an ice bath to stop cooking.
2️⃣ Toast the Almonds:
- In a large skillet, melt butter over medium heat.
- Add sliced almonds and toast until golden brown, stirring frequently (about 2 minutes).
3️⃣ Sauté the Green Beans:
- Add the drained green beans and garlic to the skillet.
- Toss and cook for 2-3 minutes, seasoning with salt, black pepper, and lemon juice.

Notes
- Use frozen green beans: Skip blanching and directly sauté them until heated through.
- For a bacon twist, cook chopped bacon first, then sauté the beans in the rendered fat.
