Description

A classic French-inspired side dish, Green Bean Almondine features tender-crisp green beans sautéed with toasty almonds, garlic, and butter. It’s easy, elegant, and perfect for holiday dinners or a simple weeknight meal!

Ingredients

Units Scale
  • 1 lb fresh green beans (trimmed)
  • 2 tbsp butter (or olive oil for a lighter version)
  • 1/4 cup sliced almonds
  • 1 clove garlic (minced)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice (optional, for brightness)

Instructions

1️⃣ Blanch the Green Beans:

  • Bring a pot of salted water to a boil.
  • Add the green beans and cook for 2-3 minutes until bright green and slightly tender.
  • Drain and transfer to an ice bath to stop cooking.

2️⃣ Toast the Almonds:

  • In a large skillet, melt butter over medium heat.
  • Add sliced almonds and toast until golden brown, stirring frequently (about 2 minutes).

3️⃣ Sauté the Green Beans:

  • Add the drained green beans and garlic to the skillet.
  • Toss and cook for 2-3 minutes, seasoning with salt, black pepper, and lemon juice.

4️⃣ Serve & Enjoy!

  • Transfer to a serving dish and enjoy as a delicious side for any meal!

Notes

  • Use frozen green beans: Skip blanching and directly sauté them until heated through.
  • For a bacon twist, cook chopped bacon first, then sauté the beans in the rendered fat.
  • Swap almonds for pecans or walnuts for variety!
