For the Chicken Gyros:
- 2 boneless, skinless chicken breasts (sliced into strips)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt & black pepper to taste
- 4 pita breads (lightly warmed)
- 1 cup cherry tomatoes (diced)
- 1/2 red onion (thinly sliced)
- 1 cup romaine lettuce (chopped)
- Fresh parsley for garnish
For the Watermelon Rind Tzatziki:
- 1 cup plain Greek yogurt
- 1/2 cup finely grated watermelon rind (drained of excess liquid)
- 1 small cucumber (grated and squeezed dry)
- 1 clove garlic (minced)
- 1 tbsp fresh dill (chopped)
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt & black pepper to taste
Instructions
1️⃣ Marinate the Chicken:
- In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
- Add the chicken, toss to coat, and marinate for at least 30 minutes.
2️⃣ Cook the Chicken:
- Heat a grill or pan over medium-high heat.
- Cook the chicken strips for about 5-6 minutes per side, until golden and fully cooked.
3️⃣ Make the Watermelon Rind Tzatziki:
- In a bowl, mix Greek yogurt, grated watermelon rind, cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper.
- Stir well and refrigerate for at least 15 minutes to let the flavors meld.
4️⃣ Assemble the Gyros:
- Place lettuce, diced tomatoes, and sliced red onions on warm pita bread.
- Add the grilled chicken and top generously with tzatziki.
- Garnish with fresh parsley.
