Description

A fresh and flavorful twist on classic chicken gyros! These juicy grilled chicken gyros are paired with crisp veggies and a unique, refreshing tzatziki sauce made with watermelon rind. A perfect Greek-inspired meal for lunch or dinner!


Ingredients

For the Chicken Gyros:
  • 2 boneless, skinless chicken breasts (sliced into strips)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt & black pepper to taste
  • 4 pita breads (lightly warmed)
  • 1 cup cherry tomatoes (diced)
  • 1/2 red onion (thinly sliced)
  • 1 cup romaine lettuce (chopped)
  • Fresh parsley for garnish
For the Watermelon Rind Tzatziki:
  • 1 cup plain Greek yogurt
  • 1/2 cup finely grated watermelon rind (drained of excess liquid)
  • 1 small cucumber (grated and squeezed dry)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt & black pepper to taste

Instructions

1️⃣ Marinate the Chicken:

  • In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
  • Add the chicken, toss to coat, and marinate for at least 30 minutes.

2️⃣ Cook the Chicken:

  • Heat a grill or pan over medium-high heat.
  • Cook the chicken strips for about 5-6 minutes per side, until golden and fully cooked.

3️⃣ Make the Watermelon Rind Tzatziki:

  • In a bowl, mix Greek yogurt, grated watermelon rind, cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper.
  • Stir well and refrigerate for at least 15 minutes to let the flavors meld.

4️⃣ Assemble the Gyros:

  • Place lettuce, diced tomatoes, and sliced red onions on warm pita bread.
  • Add the grilled chicken and top generously with tzatziki.
  • Garnish with fresh parsley.
