Description

Juicy, flavorful Greek-style chicken gyros, slow-roasted or grilled to perfection, and served with warm pita and creamy tzatziki. A delicious and authentic Greek dish that’s perfect for any occasion!


Ingredients

For the Chicken:
  • 2 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 3 tbsp Greek yogurt
  • 3 tbsp lemon juice
  • 4 cloves garlic (minced)
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
For Serving:
  • 4 pita breads (lightly toasted)
  • 1 cup tzatziki sauce
  • 1 cup chopped tomatoes
  • 1/2 cucumber (sliced)
  • 1/2 red onion (thinly sliced)
  • Fresh parsley for garnish

Instructions

1️⃣ Marinate the Chicken:

  • In a large bowl, mix olive oil, Greek yogurt, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
  • Coat the chicken thighs well in the marinade and refrigerate for at least 2 hours (overnight for best flavor).

2️⃣ Stack & Roast:

  • Preheat oven to 375°F (190°C).
  • Stack the marinated chicken onto a vertical skewer or oven-safe skewer setup.
  • Roast for about 1.5 hours, basting occasionally with pan juices, until golden brown and fully cooked.

3️⃣ Slice & Assemble:

  • Thinly slice the roasted chicken.
  • Place it on warm pita bread, add tzatziki, tomatoes, cucumbers, and red onions.
  • Garnish with fresh parsley.

Notes

  • If you don’t have a vertical skewer setup, you can roast the chicken on a baking sheet or grill it over medium-high heat for about 6-7 minutes per side.
  • Let the cooked chicken rest for a few minutes before slicing to keep it juicy.
