For the Chicken:
- 2 lbs boneless, skinless chicken thighs
- 3 tbsp olive oil
- 3 tbsp Greek yogurt
- 3 tbsp lemon juice
- 4 cloves garlic (minced)
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
For Serving:
- 4 pita breads (lightly toasted)
- 1 cup tzatziki sauce
- 1 cup chopped tomatoes
- 1/2 cucumber (sliced)
- 1/2 red onion (thinly sliced)
- Fresh parsley for garnish
Instructions
1️⃣ Marinate the Chicken:
- In a large bowl, mix olive oil, Greek yogurt, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
- Coat the chicken thighs well in the marinade and refrigerate for at least 2 hours (overnight for best flavor).
2️⃣ Stack & Roast:
- Preheat oven to 375°F (190°C).
- Stack the marinated chicken onto a vertical skewer or oven-safe skewer setup.
- Roast for about 1.5 hours, basting occasionally with pan juices, until golden brown and fully cooked.
3️⃣ Slice & Assemble:
- Thinly slice the roasted chicken.
- Place it on warm pita bread, add tzatziki, tomatoes, cucumbers, and red onions.
- Garnish with fresh parsley.

Notes
- If you don’t have a vertical skewer setup, you can roast the chicken on a baking sheet or grill it over medium-high heat for about 6-7 minutes per side.
- Let the cooked chicken rest for a few minutes before slicing to keep it juicy.
