- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for dusting)
- 1 egg yolk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup almonds, toasted and chopped
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter & Sugar: In a bowl, cream butter and powdered sugar until light and fluffy. Add egg yolk and vanilla, mixing well.
- Combine Dry Ingredients: In a separate bowl, mix flour, baking powder, salt, and chopped almonds. Gradually add to the butter mixture, mixing until a soft dough forms.
- Shape Cookies: Roll dough into small rounds and place them on the prepared baking sheet.
- Bake: Bake for 15-18 minutes, or until lightly golden.
- Dust with Sugar: While still warm, dust generously with powdered sugar.
- Cool & Serve: Let cookies cool completely before serving.
Notes
- For a more authentic flavor, add a splash of ouzo or brandy to the dough.
- Store in an airtight container for up to a week.
- Double dust with powdered sugar for an extra snowy look.
