Ingredients

Saffron Panna Cotta:

  • 1 1/2 cups heavy cream

  • 1/2 cup whole milk

  • 1/3 cup granulated sugar

  • 1 tsp vanilla extract

  • 1/4 tsp saffron threads, crushed and soaked in 1 tbsp warm water

  • 1 1/4 tsp powdered gelatin

  • 2 tbsp cold water

Spicy Berry Compote:

  • 1 cup mixed berries (strawberries, raspberries, blackberries)

  • 2 tbsp sugar

  • 1/8 tsp cayenne pepper (adjust to taste)

  • Zest of 1/2 lemon

Graham Crumble:

  • 1/2 cup crushed graham crackers

  • 2 tbsp melted butter

  • 1 tbsp brown sugar

Optional Garnish:

  • Fresh mango cubes or golden berries

  • Pistachio dust

  • Edible gold leaf


Instructions

Make the Panna Cotta:

  1. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.

  2. In a saucepan, heat cream, milk, sugar, vanilla, and soaked saffron until just simmering.

  3. Remove from heat and stir in the bloomed gelatin until fully dissolved.

  4. Let cool slightly, then pour into champagne flutes or dessert glasses (filling 1/3 full).

  5. Chill for at least 2 hours until fully set.

Make the Berry Compote: 6. In a saucepan, combine berries, sugar, cayenne, and lemon zest.
7. Cook over medium heat for 7–8 minutes, lightly mashing the fruit until thickened. Cool completely.

Make the Graham Crumble: 8. Mix graham cracker crumbs, melted butter, and brown sugar until evenly coated and crumbly.

 

Assemble the Trifles: 9. Once panna cotta is set, layer with graham crumble, followed by a generous spoonful of berry compote.
10. Optional: add another layer of panna cotta or finish with more compote.
11. Garnish with mango or golden berries, a sprinkle of pistachio dust, and edible gold leaf for a radiant Aries finish.
