Description

For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 4 oz goat cheese
  • 2 tbsp fresh herbs (thyme, rosemary, or parsley, chopped)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg (beaten)
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For the Caramelized Onion Sauce:
  • 1 large onion (thinly sliced)
  • 2 tbsp butter
  • 1 tsp balsamic vinegar
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Instructions

  • Prepare the Chicken: Slice a pocket into each chicken breast and stuff with goat cheese and fresh herbs. Secure with toothpicks to keep the filling inside.
  • Bread the Chicken: Dredge each stuffed chicken breast in flour, dip in beaten egg, and coat with a mixture of panko and Parmesan cheese.
  • Cook the Chicken: Heat olive oil in a pan over medium heat and cook the chicken for 5-6 minutes per side until golden brown and fully cooked. Remove from the pan and let rest.
  • Make the Sauce: In the same pan, melt butter and sauté onions over low heat until caramelized (about 15 minutes). Add balsamic vinegar, chicken broth, and garlic powder, simmering for 5 minutes. Stir in heavy cream, season with salt and pepper, and cook until thickened.
  • Assemble & Serve: Drizzle the caramelized onion sauce over the crispy goat cheese-stuffed chicken and serve with roasted vegetables, mashed potatoes, or rice.
