Description

For the Fritters:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/3 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • 3/4 cup fresh blueberries
  • Vegetable oil (for frying)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  • Prepare the Batter:

    • In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
    • In a separate bowl, beat the egg, then add milk, vanilla extract, and melted butter.
    • Stir wet ingredients into the dry ingredients until just combined (do not overmix).
    • Gently fold in the fresh blueberries, being careful not to crush them.
  • Heat the Oil:

    • Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
  • Fry the Fritters:

    • Using a spoon, drop small portions of batter into the hot oil.
    • Fry for 2-3 minutes per side, until golden brown and crispy.
    • Remove fritters with a slotted spoon and drain on paper towels.
  • Make the Glaze:

    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  • Glaze & Serve:

    • Drizzle the glaze over the warm fritters and let it set before serving.
    • Enjoy fresh!

Notes

  • For extra crunch, add 1 tbsp of cornstarch to the dry ingredients.
  • Frozen blueberries can be used but should be added straight from the freezer.
  • Best eaten immediately but can be stored for a day in an airtight container.
