Description

This comforting German Potato Soup (Kartoffelsuppe) is a hearty mix of potatoes, carrots, sausage, and crispy bacon simmered in a creamy herb-infused broth. A cozy, flavorful bowl of authentic German comfort food perfect for chilly days.


Ingredients

  • 6 slices bacon, chopped

  • 1 lb German-style sausage (bratwurst or kielbasa), sliced

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 3 medium potatoes, peeled and diced

  • 2 carrots, chopped

  • 2 stalks celery, chopped

  • 4 cups chicken or vegetable broth

  • 1/2 cup heavy cream

  • 1 teaspoon dried marjoram or thyme

  • Salt and pepper, to taste

 

  • Fresh parsley, chopped (for garnish)


Instructions

  • In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove and set aside.

  • Add sliced sausage to the bacon fat and brown lightly. Remove and set aside with the bacon.

  • In the same pot, sauté diced onion until translucent. Stir in garlic and cook for 1 minute more.

  • Add potatoes, carrots, celery, dried marjoram or thyme, salt, and pepper. Pour in broth and bring to a boil.

  • Reduce heat, cover, and simmer for 20–25 minutes or until potatoes are tender.

  • Stir in the heavy cream and return the bacon and sausage to the pot. Simmer for 5 more minutes.

 

  • Serve hot, garnished with chopped fresh parsley.


Notes

  • For a thicker soup, lightly mash some of the potatoes before adding cream.

  • Add leeks for a more traditional twist.

  • Use smoked sausage for a deeper flavor.
