This comforting German Potato Soup (Kartoffelsuppe) is a hearty mix of potatoes, carrots, sausage, and crispy bacon simmered in a creamy herb-infused broth. A cozy, flavorful bowl of authentic German comfort food perfect for chilly days.
Ingredients

6 slices bacon, chopped

1 lb German-style sausage (bratwurst or kielbasa), sliced

1 medium onion, diced

3 garlic cloves, minced

3 medium potatoes, peeled and diced

2 carrots, chopped

2 stalks celery, chopped

4 cups chicken or vegetable broth

1/2 cup heavy cream

1 teaspoon dried marjoram or thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove and set aside.

Add sliced sausage to the bacon fat and brown lightly. Remove and set aside with the bacon.

In the same pot, sauté diced onion until translucent. Stir in garlic and cook for 1 minute more.

Add potatoes, carrots, celery, dried marjoram or thyme, salt, and pepper. Pour in broth and bring to a boil.

Reduce heat, cover, and simmer for 20–25 minutes or until potatoes are tender.

Stir in the heavy cream and return the bacon and sausage to the pot. Simmer for 5 more minutes.

Serve hot, garnished with chopped fresh parsley.

For a thicker soup, lightly mash some of the potatoes before adding cream.
