Description

Decorated to resemble sparkling amethyst geodes, each sugar cookie features royal icing rings in rich purple tones, shimmering sugar crystals, and celestial shimmer. Ingredients

Sugar Cookie Dough:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 1/2 tsp vanilla extract

  • 1/2 tsp almond extract (optional)

  • 2 3/4 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Royal Icing Base:

  • 4 cups powdered sugar

  • 3 tbsp meringue powder

  • 6-7 tbsp water (adjust as needed)

  • Gel food coloring: violet, purple, lavender, black

  • White food gel

Decor Tools & Toppings:

 

  • Coarse sanding sugar or rock sugar (clear or purple-tinted)

  • Edible shimmer or gold luster dust (optional)

  • Toothpicks or fine brushes

  • Oval or organic geode-shaped cookie cutters


Instructions

Make the Cookies:

  1. Cream butter and sugar until light and fluffy. Add egg, vanilla, and almond extract (if using).

  2. Mix in flour, baking powder, and salt until dough forms. Wrap and chill for 30 minutes.

  3. Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness and cut into irregular oval or “slice” shapes to mimic gemstones.

  4. Bake for 8–10 minutes. Let cool completely on a wire rack.

Prepare Royal Icing: 5. Beat powdered sugar, meringue powder, and water until stiff peaks form.
6. Divide into separate bowls and tint icing in gradients of purple (from deep violet to soft lavender). Leave one portion white for outlining.

Decorate the Geodes: 7. Using a toothpick or fine brush, layer icing in concentric rings—darkest color in the center, fading to white on the outer edge.
8. While the icing is still wet, sprinkle coarse sanding sugar or rock sugar in the center to mimic crystal texture.
9. Let the cookies dry fully.

Finishing Touches: 10. Once dry, dust the edges with edible shimmer or paint with edible gold luster for extra drama.
11. Package or plate once fully set for gifting or display.
